I wasn’t feeling so great today so I decided to pick through the fridge and see what I could concoct to make myself feel better. Luckily I just had my Annie’s buying club organic produce delivery on Wednesday so I was very stocked with fresh veggies! I always have chicken broth and veggie stock on hand which made this easy too! Oh and don’t forget the magic InstantPot! Where would we be without this? So I share to you this quick simple recipe and I hope that you can share it with someone special too!
2tbs olive oil
1 organic red bell pepper, chopped
1 organic white onion, chopped
3 organic chicken breasts, cut in 1″ pieces
2 cans of Fire Roasted chopped tomatoes
2 scoops of Thai red curry paste
2 cups Chicken broth or Veggie Stock
1 small can green chilies
1/4 cup Nutritional Yeast
Salt, pepper, powdered garlic, dry onions, powdered turmeric, and other seasoning to taste
First start with your InstantPot on the sauté setting. Add the onions and red peppers and stir occasionally and till they are translucent and cooked. Add the chicken breasts and let them slightly cook on all sides. Next add the cans of tomatoes, red curry paste, veggie or chicken stock, green chilies and the nutritional yeast. I add my seasoning of salt and pepper, etc. during the sauté as well as after I have added all of the ingredients. Set the InstantPot to meet/stew for 25 minutes. Let the InstantPot release naturally.
After it has cooked thoroughly you can shred the chicken with a couple of forks back-and-forth and if needed on more broth to make it more soupy. Personally I like the big chunks of chicken.
